When dried, the pods acquire thicker shades, from dark to orange-red. Usually pepper is dried in the sun, from which the fruits shrivel; then they are released from the cup and ground.
Also, pepper pods can be hung in a dry place and kept dry all winter.
Large dried chili peppers are often used in Mexican cuisine - famous sauces are made from them. Before that, the dried fruits are fried to enhance the taste and soaked in water, and then a puree-like paste is made from this infusion.
The minimum order is 500 kg.
